This stuffed avocado snack recipe is a wonderful snack for any time of the day.
Avocados are full of great fats to keep your cells happy!
They are also a great source of folate, B5, potassium, copper and Vitamin K
This is why they are a fantastic food for pregnant women.
They also take 9 months to grow and even look pregnant themselves! Hehe.
Stuffed Avocado Snack Recipe
To make things simple - This recipe makes 4 servings (4 halves)
Ingredients:
2 X Avocados
6 x Small cherry tomatoes or 1 large tomato
1 x Small cucumber
10 x Coriander and/or Mint leaves
1 x Juice of fresh lime (Use lemon if you prefer)
2 x Tablespoon fresh pomegranate seeds
1 x Tablespoon chopped goats cheese (optional)
1 x Jalapeño (Optional if you don't like heat)
Celtic or sea salt, pepper
Method:
Slice your avocado in half (long-ways), remove seed
Dice tomatoes and cucumber
Chop fresh herbs
Combine together in a separate bowl
Add pomegranate seeds, save some for garnishing
Optional: Add minced jalapeño for desired heat
Add salt and pepper
Squeeze in lime juice and mix
Scoop salsa mixture over avocado halves.
Garnish with pomegranate seeds, goats cheese and more pepper

Spruce up the dish:
If you are serving for guests you can add a bunch of sprouts or almond flakes on top for decoration or add green capsicum or onion to add a bit more veggies to the meal.
Serves great with a grilled piece of fish and salad.
